Spinach salad and turkey sandwich
This sounds like something AI would come up with when you say āwhat can do with what is in the fridgeā and it just throws then all together.
At this point itās dinner, but itās my first meal of the day. Cherry tomatoes with roasted red pepper hummus. Once of my staple meals when I lived in London and was so homesick I could barely eat at all.
My recent wfh lunches have been:
-Roast beef on an English muffin with Swiss, smoked horseradish sauce, and a few crispy fried onions (the salad topping).
-Several sliced campari tomatoes, with a heavy dose of fresh cracked pepper and a dash of sea salt.
-Bowl of watermelon.
Iāll mix up the sandwich a bit, but Iāll always toast it in the toaster oven, and usually on an English muffin. Been on the sliced tomatoes for maybe a couple years now. They replaced my chips and salsa routine from the covid years.
Jasonās Deli, salad bar. Perfectly cromulent, but with family traveling thru town, which made it very nice. They love to stop there on the midpoint of their regular journey, so we always make an effort to visit.
We have one in town and Iāve never gone, when I was in Denver there was one near the office we went to pretty often. I need to put it on my list, Iām not in that part of town too often so I keep forgetting it exists.
Their gumbo is pretty good, and it goes good with a muffaletta.
Itās been so long I donāt recall them having gumbo, Iād be up for that.
Toasted bagel with olive oil. Then banana+peanut butter.
DQ, they have a cheeseburger, fries, drink, and dessert for $7. Good deal.

Iāve been doing this a fair amount lately. Itās not a daily thing or anything for me now, but itās a super easy way for a healthy breakfast/brunch that sticks with me for a bit. I usually make them 3 at a time, and they keep for days in the fridge.
Yesterday, I was near my hometown, so I took my wife to the pizza place I worked at as a child. Only it had been sold, renovated, and now there was a thin-blue-line sticker on the door so instead we went to a random fancy italian place nearby.
I ordered a crabcake on top of a chicken on top of a lemon cream sauce and pasta. It was possibly my favorite meal ever?
I feel like I should make some kind of bestest of the best ranking.

Sushi! Had some soft shell crab, salmon skin, and scallops. And a salad with the ginger dressing, that stuff is so good.
Leftover homemade crab cakes. Made some for dinner last night. Today, having them as small sandwiches.
