Bumblebee makes this really tasty tuna salad cracker snack kit that really hits the spot. My husband just brought home six of them from the store.

Funny thing is, the tuna salad by itself isn’t anything special, and the crackers aren’t anything special, but the combo is very good.

See if you can find these near you, Costco sells them here. 270 Calories and they are straight crack.

Picture on the package looks much nicer than the actual salmon: looks like all the trimmings! Nevertheless, I would buy this too!!

Meijer carries them, and Walmart. Meijer is 1000x better than Walmart, so I’ll try there.

I was out in a po town and hungry, so checked my phone to see what was there. All the typical fast food, 2 sit down American restaurants, one sit down BBQ, and a non-chain, I think, Mexican restaurant where I’d done takeout once before. I went with the Mexican place. Carnitas enchilladas with red sauce. It was ok. On leaving, I noticed there was a second Mexican fast food place about 50 yards away in the same parking lot. I might have tried it, since I’d already been at the other place, had they appeared in my search or had I taken another entrance into the lot. They’re in need of some SEO and a bigger sign.

Paia Fish Market. They make this ‘magic sauce,’ which is basically vinegar, sugar, tamarind, cayenne, and fish sauce. I got some broiled pink snapper and poured this liberally over the top. With rice and slaw. This is what I needed. Or maybe the two pints of IPA helped, it’s hard to say at this point.

Between my recent trip to Maui and recovering from gum graft surgery, I’ve been making homemade dole whip for lunch for the last few days.

Puree 2 cups of frozen pineapple chunks, 1/4 cup coconut milk, and 2.5 tablespoons of sugar. Mmm…

Dal and quinoa. Was good but could have been better if I’d used canned coconut milk instead of the watered down version they sell in the dairy section.

Yeah pickles! I made 20 jars of dill pickles and about 16 jars of pickled beets in the last couple of weeks. Good times.

Did a marine life boat tour today in Sitka. We saw lots of sea urchins, starfish, abalone, jumping fish, sea otters, sea lions, and bald eagles (both juveniles and adults). Stopped at a lodge for lunch, where we had crab legs, salmon, and prime rib. It was all very very good.
