With 30 years to run with you should maybe set up a tontine to deal with the possibilities.
Why would they ruin them by making croquettes out of them? I imagine people getting them and stripping that crap off.
Or even cut them into small pieces?
I have other food to eat. And this appears to be some sort of fad in which I’d rather not be a participant.
I feel the same about pretty much all food. I’d rather not wait at In-N-Out for that food. 5 minutes, tops. But, I do have strategies for that, like not going between 6-8PM. That’s just dumb, especially if there is something faster nearby.
Same for Salt & Straw (fancy ice cream in Venice Beach) or Diddy Riese (ice cream & cookie sandwiches) in Westwood. If there’s a line out the door, forget it. I can get it some other time. (And I don’t go out of my way for them. I have to be going that direction to even have it pop into my plans.)
Yeah, the only places I’m waiting in a long line would be upscale places like Applebee’s or the Olive Garden!

There are some nearby places that have croquettes de jamon which I can get in 15 min so that’ll do.
A combustion wireless thermometer.
I already have a meater thermometer, so this is maybe a dumb purchase. But this promises to help with the edge cases where the meater isn’t ideal, like when it’s hard to find the center of the food, or when you change the oven temp pathway through the cook. And the display doubles as a kitchen timer, which i need another of.
It also automatically can tell you when your meat has been pasteurized according to the “more time at lower temp” numbers, which I’m constantly looking up.
If you are making croquettes, couldn’t you just grind together lean meat and fat?
It does all that with just one probe?

I’ve been watching some of his videos. He’s very clear, and obviously knows a great deal about the science of cooking.
He also did a sous vide circulator.
I hadn’t looked for my warm hat until the cold hit, and I’ve still not found it. So I’ve been wearing one of my son’s undersized hats during the last week of -25 or worse wind chill. I finally ordered something tonight, but it doesn’t say when it will arrive. And then it dawned on me that my route to work can take me past both Dick’s Sporting Goods and REI. I should have just stopped there. I may tomorrow, as we’re going back to the -25 wind chill for a little bit.
I want to commission a quilt and I’m fully prepared to pay up front and wait a year.
I’m not paying for food 30 years into the future.
People join beer/wine/cheese/fruit/whatever of the month clubs and it’s maybe as much as 13 or 14 months from payment until final shipment. More than that feels unusual to me because it’s not part of my culture to do so. ![]()
On a related note, high-end in-demand Bordeaux is often bought en primeur, while still in the barrel. This can be a year or two before the wine is ready to be bottled but after critics have tasted a barrel sample.
I don’t think I’ll ever get there. One of my wine clubs doesn’t even distribute the most recent vintages. Got a 2018 Chardonnay and 2017 Pinot, both of which are ready to drink. Nice that they store it for us instead of my wasting space in my fridge not being drank until its (or it is?) time.
I want to buy an exercise mat but not a yoga mat. Yoga mats are so thin I might as well be on the floor. My new PT exercises include bridges and clams and another stretch where I’m lying down. I’ve done these on my bed before but it’s really too soft.
My local Academy didn’t have anything. I looked at Amazon but there are a gajillion choices.
Suggestions on where to even look? Is there a fitness superstore?
I googled best exercise mats and the answers were clearly not designed for an old fat person with back issues.
I have a super thick Reebok (I think?) brand exercise mat… think it’s maybe about 1.5” thick. I believe I got it at Target, but that was literally 20 years ago. I love it but I’m not sure where to get another.
