Amarone wine is produced using the appassimento method, where grapes (primarily Corvina, Corvinone, and Rondinella) are dried on mats or racks for 100-120 days into raisins. This process, taking place from October to January, reduces water weight by 30-40%, concentrating sugars and acids to create a full-bodied, high-alcohol (14-16%+) red wine.

N.B. There is further clarification, filtering, and refinement so that you get a lovely sweet wine instead of some :rabbit_face: :poop: lookin’ piece of :wastebasket: .

Our neighbors are moving out in ten days. They’ve already packed up the mower, so I told them I’d mow the lawn, which isn’t very big. They’ve tried to pay me but I said no, so instead they’ve left me a six pack on the porch. Good deal.

Well, after perusing guidance on the subject, I either have or have requested all but two of the documents I’ll need to apply for Canadian citizenship by decent.

I still need to figure out how to request an official copy of a marriage record I’ve seen a scan of – the application might be successful without it, but since I need to wait for a couple of other documents to arrive, I can take the time – and there’s a slight chance I can get a good copy of my great-great-grandmother’s baptismal record which would count as firm proof of her Canadian citizenship…but it looks like this could actually happen.

(Annoyingly, one of the county clerk offices I’m getting a document from doesn’t accept checks or plastic. Tomorrow I get to figure out how to buy a money order.)

Did you ask if they accept a direct transfer from your account? Interac e-transfers are universal here, even for government entities.

It’s a small rural county in an area that’s been economically challenged for decades.

Whereas I was able to make almost all of my records requests online (albeit incurring a “convenience charge” for the privilege, since they’re all using one of a couple of vendors), for this county the records request form is a pdf of a Word document they intended to be printed and filled out by hand, and the form includes bold red print “cash or money order only”…and they even require a SASE to be provided.

While I bet the county has a mechanism to accept wire transfers, or I’d think they’d be willing to accept a certified check…

I bought myself two new sheath dresses in anticipation of an upcoming onsite week. They both look ok on me.

So happy that the four astronauts appear to have returned safely. Also happy that CNN had “veteran space traveller” William Shatner :canada: provide his insights after the splashdown.
