Homemade coleslaw and a lettuce/tomato/chicken tossed salad with a few crackers.
I was tight for time, so ended up with a frozen beef and peppers. It didn’t look great but was more than edible. It was more comfort-food-like than I expected.

I made coronation chicken today, following the original recipe as closely as I could, and I found it very bland. It could have used more curry, I think. Still ok, was able to spruce it up after it was made, and it tasted alright, just not amazing.
I had never in my life heard of such a thing. Also, my back hurts from having to crawl out from under this rock.
I discovered it when searching for curry chicken salad (my favorite tuna salad has curry). The tuna salad is better!

The coronation chicken IS the curry chicken salad I found. I tried this one, but I would at least double the curry and sub craisins for apricots and add way way more.
And this is my favorite tuna salad recipe, with curry. I’m sure I’ve posted it here before. I make it a few times a month.
