Thanksgiving plans

Have had pig cheeks but no other part of the snout.

I associate jowls with the southern US so not surprised that a Georgian such as yourself partakes of them.

Having grown up on a farm with many different types of animals, I have always felt that city people should have an appreciation of where there food comes from. However I would struggle myself with eating a pig snout if it was clear that was what it was. That is as visceral an image as the goats’ eyes I was once offered in Morocco. They came in the head: it would have been easier to eat them if they had been deep-fried goats’ eyes!

The snouts were diced up into small chunks and stewed. It was served swimming in a flavorful sauce that had a lot of paprika in it. It didn’t have the outward appearance of snouts, and I wouldn’t have guessed that’s what it was. Same place also had pig ears on the menu but I didn’t have that.

Also had ox tail on this trip, which I’ve had before. This particular spot is next to the Madrid bull ring and has some sort of agreement where they serve the tails of the fighting bulls. Of course 95% of the ox tails or more they serve there are not from the bull ring. Like in my area, ox tails are now pretty pricey there. What was once a cheap cut is now very trendy.

at Korean or Japanese BBQ places, beef tongues are super tasty (and expensive)

When I was a kid we slaughtered our own animals and very few parts of the animals were not eaten. I enjoyed beef tongue and heart in those days but am largely vegetarian at this stage in life.

Reminds me of the joke where the waiter says, Sometimes the bull wins
