I made a big pot of chicken stock last night. It’s cooled off and I’m going to strain and freeze it.
I’ve never had luck with stock. Mines always tasteless. And last time I made it, some idiot put it in mason jars and guess how that fared in the freezer.
I roast the bones and veggies first. It slow simmers for a solid 7+ hours with some herbs; salt gets added in stages.

Lately I’ve been doing a chicken broth with leftover Costco rotisserie chicken, which I let simmer for 12 hours. I do it in white wine and water and add an onion, garlic, carrots and celery. If I have some leftover shrimp shells I’ll add them for the last couple of hours.

A woman on Reddit asked if I was still accepting quilt top donations to finish. I donate them to foster kids when done. I said yes, and gave her my address.
Today, I got a $25 gift card in the mail to my local quilt shop from the woman, with a nice note. I assume she’s sending me a quilt top, too! She lives in Buffalo. It was a very sweet gesture. She’s a total stranger to me otherwise.
I overheard Kid 1 talking to a friend about spring break. “Oh, you’re going to Oregon? I’m going to New York, going to hang out in the city.” He has dealt with more than his fair share of crap in his life, most vacations have been to see family in the Midwest, so I’m happy to indulge him with some fun.
Kid 2 was having a terrible day (much of which was due to previous choices catching up), and he texted me upset, asking if I could pick him up from school. He’s a tough kid, rarely asking for much, and we often butt heads. However, it was nice he knows I have his back when it feels like life has kicked him to the curb.
