Agreed. If I vaguely remember English class sentence diagramming, in “I play the seven of hearts”, seven is a noun. Subject (and noun), verb, article (which I think can be a noun or an adjective?), noun, preposition, adjective.

Colors and numbers can be nouns easily, but most of their use is as adjectives. We use a color to describe something, we use a number to state how many.
“Green is my favorite color” - Green is a noun. “That sign is green” - Green is an adjective.
“One is the best number” - One is a noun. “I’ll take one cake, please” - One is an adjective.
