There is a BBQ place 15 mins from me that does pork belly burnt ends. I make sure to get them every time. Every bite is like a morsel of heaven.

Went over to a friend’s house and he smoked a pork butt. Also had meatballs, pig in a blanket, and junk food. No pictures this time.
What fish did you use? Blackened Mahi from a local place near fam’s beach house is a seasonal staple.
The recipe I was using as a template called for mahi, but the fishmonger I went to didn’t have that at the moment. I think most light white meat fish would work well for this. I was torn between the cod and halibut, but went with cod.
Q: How often do you use the same plank for Salmon?
I occasionally reuse them but often toss them. This one was pretty tiny so I pitched it.
