I love tri-tip!
I was gifted some bell peppers from a friend’s garden, so I went with stuffed peppers on the smoker tonight.
I think it’s due to the demand in Southern and Central California.
I think there are regional preferences, and steer are butchered differently for different markets.

OK, so when you say you did them on the smoker, did you just do them over charcoal briquets? Or something else?
These were smoked for an hour over charcoal and apple wood. Then to finish them I break down the smoker and direct grill them over the coals to get the skin even crispier. Picture is near the end of the cook.
Pictures! The wings were smoked in the top section with the pan/heat deflector in place. Then I completely remove the middle section and put the grate right on top of the coals in the bottom

I’m getting a new deck and am wondering if people put something under their grill/smoker to protect their deck from any mishaps, drips or leaks?
For quite a while I have had the grill down on the cement patio so I haven’t worried as much.
SO smoked a couple racks of ribs on his Traeger. Did his own dry rub and served them with a homemade blueberry bbq sauce. Omg so good.

Yep, we have a rubber mat under ours. that way the deck doesn’t get all greasy.

That looks very tasty. I am not doing carbs but I could see whipping up a bowl with some of that chicken and sauce, maybe adding some Kalamata olives and tahini or tzatziki. Mmmm, lunch inspo.
Yes, the chicken is great without the pita too. It’s very easy. One thing I usually do that I didn’t this time (and missed) is to put some little slices of red onion in between the chicken pieces on the skewers.
