I made a breakthrough in my world of cheese.
I seemingly cannot use a box grater without cutting off chunks of my fingers, and as you should know, pre-shredded cheeses suck because they are treated with an anticoagulant starch, which limits their usefulness.
But I recently bought a shredding attachment for my kitchen aid mixer, and that high powered beast can shred through cheese blocks at a more than a pound per minute. I grately recommend. YSWIDT?

That looks grate. Cleaning looks like a lot of work, though. Would prefer dishwasher-safe pieces. Oh, they say itβs easy to clean, but not to my satisfaction.
I generally manually grate the cheese a little slower when the block gets smaller. Just common sense.
We got a Zyliss manual grater. Works well, can be put in the dishwasher.
