Hmm, a few years ago I made a “flag pie” for the Fourth of July. It was mostly strawberries with a corner that was just blueberries and then I used pastry to make the stars and the white stripes.

It was really tasty on the fourth. The leftovers were less tasty. It looked approximately like this (but this is a pic from the internet):

Why wasn’t it good leftover? I usually enjoy a pie for most of a week.

I don’t know. I was surprised. Fortunately there wasn’t much left over to begin with as we had people over so there were lots of mouths eating it the first night, but I ended up throwing a slice out, which made me sad.

I’ve never had a strawberry pie that had been baked. The strawberries were probably already quite soft, but I imagine in the leftovers they had fallen apart completely.

That could be. I don’t make a lot of strawberry pies, but I was feeling inspired that day.

We make them in may/June when the strawberry patch is overflowing. Graham cracker crust and the filling has gelatin in it. I’ll see if I have the recipe handy. But yes, gotta have good strawberries.

I’ve made this one. Used a graham cracker crust though instead of baking one. Also made them with only cornstarch as the thickener.

If by “carry” you mean “hold it all together” that’s what the gelatin is for.

Also, please don’t ruin my strawberry-anything by adding rhubarb. It’s an automatic full-grade deduction. You’ve gone from an A+ to a B+, at best.

Naw, i was referring to the flavor. I wasn’t worried about the texture.

I like sour fruit in pies. I often add some lemon juice if the fruit isn’t tangy enough. That’s the point of the rhubarb. Although I’m not a huge fan of the texture of rhubarb. My husband likes it though, and my mom. And strawberry-rhubarb is a classic.

When I’m on my deathbed and they ask if I have any regrets it’s gonna be missing this
