it seems increasingly difficult to buy whole turkeys or bone in turkey breasts that are not injected with a solution. I get that they can sell the same bird at higher weight by injecting broth, but I prefer to do that sort of stuff myself. I smoked some turkey breasts last weekend, and I could not find a regular non-doctored turkey breast at the 3 stores I checked. Sure, I can order one from the butcher but I did not plan ahead.

Butter, chicken stock, and your favorite flavorings is an excellent injection IMO. Last week it was butter, stock, Worcestershire, garlic powder, onion powder.

I am planning to make a beef Wellington, either for Thanksgiving or Christmas. I like nontraditional Thanksgiving meals, and I’ve always wanted to make a BW before.

Whenever I make a whole chicken, I boil the giblets plain and then some rice in the giblet water, chop up the cooked giblets while the rice is cooking, and when the rice is done the doggos get a nice treat of giblets n rice.

Both MiniT-s will be with me this thanksgiving. Awesome! Mini T-2 invited a collegue to join and Mini T-1 is bringing her friend as well. I ordered the BBQ place deal above. AND getting Racine Kringle delivered.

Whoa, whoa, whoa there big spender. YOu give the giblets to the DOGS? That’s my pre-meal meal.

:man_shrugging: Jaspess doesn’t like giblets, and I only like gizzard and heart. (I don’t consider neck to be a giblet.)

Turkey giblets, now that’s another matter. Although I would likely still share some of those with the weens (while turning the rest into giblet soup like Jaspmama used to do).

I’ve done steak for Thanksgiving before, a bourbon maple glaze thing. We did Mexican Thanksgiving one year. And one year my BIL was building a house and we all decided to go install doors and stain baseboards and what not, and we just got a meat and cheese tray, good times.

I’ve also really wanted to make a BW for a long time, I’m jelly.

Thanks for the link. I’m cooking my turkey tomorrow and not sure it will be totally thawed.

Ok, picked up the turkey already spatchcocked, free-range and thawed.
Put the dry brine on, wrapped tightly in saran, for overnight

I’ll be cooking turkey in between meetings.

(I might live in the US, but I don’t follow a US work schedule.)

Non trad meal at my sisters.

Her, her baby daddy, 2 kids, me, mrs f, younger kid (older one goes to fiance’s). And then some of sisters rando friends.

All good. Happy for low key. Happy for rest.

I’m looking forward to tomorrow very much. Got the beef Wellington all ready to go, and I got all the supplies for bearnaise. Plus the traditional Thanksgiving sides and desserts. It will be a tasty day.

I got my turkey last Friday…it’s been in the refrigerator since…the damn thing is still frozen…cold water baths, changing the water every 1/2 hour so I can get it into the brine tonight.

Hate when that happens.
Note to all: wednesday before is when the turkey is put in the fridge. More time to brine that way.
