Pies and other holiday recipes

Hmm, i do a spiced apple and cranberry pie that i suspect is similar to mince, but I’ve never had a mincemeat pie, so I’m not certain.

This is for a large deep pie plate.

I use a bag of cranberries, and about twice that much apple, cut into cubes about the same size as the cranberries, so it tosses together well. Lots of allspice and cardamom, some clove and nutmeg, and some white sugar and a thickening agent (flour, tapioca, or corn starch). I use a regular bottom crust and do a pretty lattice on the top, because the filling is pretty to look at, and doesn’t dry out.

Lots of chives and butter in one
The other one has some horseradish

Time to fire up the Christmas cake recipe again. Good news I found a local source for treacle, and have some lexus raisins. Those I think are the toughest ingredients to find, though some of the other things take a bit of digging.
